How to cook Chilli Herb Shrimp

Why not surprise your better half tonight chaps with this mouth watering Shrimp appetizer. She will love you for it, and what better way to start an evening then to entice her with these succulent shrimps dressed in nice herbs and spiced with fresh chilli. Just make sure she enjoys eating hot food, if not then make sure to leave out the chilli’s, last thing you need in your hands is a hot wife, especially if you’re looking forward to a romantic meal.

So roll up your sleeves and let’s get started. 

Olive Oil

You will need the following ingredients:

  • 1/3 cup (3 fl oz) Olive Oil

I’ve used the above brand of Olive Oil you choose to use which you have available.

Fresh Ginger

  • 2 tablespoons peeled and chopped fresh ginger

There are many health benefits of Ginger, so use it in your cooking regularly.  You should be able to purchase it from any supermarket.

You only need a small amount of lemongrass, so don’t waste it.

  • 2 garlic cloves, crushed (make sure you remove the skin)

You only need 2 cloves, so just buy one garlic from the supermarket.

Fresh red chilli

  • 1 small red or green chilli, seeded and chopped
Just 1 chilli is sufficient, don’t put too many otherwise she’ll be too hot to handle, and your romantic evening will not be so romantic.

Fresh Lime

  • 2 limes or lemons, juiced 
Cut half a lemon or lime into thin wedges.

Fresh Herbs

  • 1/4 cup (1/3 oz) chopped mixed fresh herbs of choice (make sure you include fresh Coriander)

Select the herb or mixture of herbs that you think she likes, you only need a small amount of it anyway so, make sure it is fresh and not pre-packed.

  • 4Ib jumbo shrimps, peeled and deveined

Try to get large king size, when cooked they look great and taste wonderful.  Also make sure that she or you don’t suffer with shrimp allergy, some people do and it can be real downer on your plans.

  • 2 tablespoons olive oil, for cooking
  • 15-20 short bamboo skewers

Fresh Coriander

  • Lime or lemon wedges, for garnish
  • Coriander (only two or three strands) 
You should be able to buy coriander from most supermarkets, if you not then try a local Asian Grocery store.

Now, in a large bowl, combine 1/3 cup olive, ginger, garlic, lemongrass, chilli, lime juice and herbs of your choice.  Mix the ingredients well, add shrimp and toss until well coated in marinade.  Cover the bowl with cling film and leave in fridge for 45-60 minutes.

Put a clean frying pan on medium heat, warm 2 tablespoons olive oil, take out the bowl from the fridge and drain the shrimps.  Now fry the shrimps (small batches) until they just change colour to an orangey shade that should take about 2-3 minutes.

Take your skewers and thread the shrimps, place on a plate with thinly sliced lemon wedges and sprinkle with coriander, you can add some salad sprinkled with Olive oil, serve to your other half, better still feed her with your own hands and enjoy.
